I’ve only had one chicken sandwich from Popeyes, and it was a damned mess. This is more like it!
Most food photographers seem to have been brainwashed into believing that any sandwich photo must have some glob of sauce dripping down the side.
From a photographers prospective, you have to show every ingredient of the sandwich, even if it’s just a corner of a pickle or a slice of cheese, so the audience subconsciously knows it’s part of the sandwich ingredients. Same applies for the sauce, doesn’t need to be a glob off the side, but it’s an easy visual indication that this particular sandwich comes with a sauce. It’d be kind of disappointing to expect a sauceless burgie to open up a wet mess.

Used Joshua Weissmans recipe (better than Popeyes)

Yea same recipe I only took out some of his unique things like Serrano powder and Barlow garlic. Just use paprika and or chili powders comes out just as good.

Thighs. No other way to keep it juicy
That’s what I use too. Do you cut them in half or flatten them at all ?
Put in a plastic back and pound the thicker part a little till it’s all one thickness. If it becomes to log maybe cut in half to fit into the oil.

Idk why everyone’s downvoting you but word up brother. I tried to make my own brioche but the stupid yeast didn’t rise and it came out as a biscuit. Had to get some classic burger rolls instead.

Is it hard for a nonexperienced cook to fry chicken?

Frying can seem intimidating but it’s not hard. All you need is a pan or pot with oil and you have a fryer. Use a thermometer to makes sure your oil is hot enough. Most common mistake is the oil is too hot or not to temp yet. This Sammy looks delicious.
What's the right temperature for something like this boneless chicken?
Somewhere around 300-350 when the chicken's frying should work. I'd get the oil hotter, around 400-425 before dropping the chicken in since the temp will lower when the chicken goes in.
Cool thanks. I actually got a oil/candy thermometer for Christmas that clasps to the side of a pot to read out the temperature so this might be something I’ll try!

The ingredient list is pretty daunting, but it is super good. That recipe has a link to his way more basic 5-ingredient pickle brined chicken too, which is a good starting point.
This wasn’t my first time frying but first time making fried chicken. Just a simple small bowl of oil that you can heat and a little confidence helps. Go one piece at a time and I would invest in an instant read thermometer. Honestly makes a huge difference when cooking bc im not guessing about whether it’s cooked or not. Also don’t be afraid to put it back the oil and constantly flip if you’re not sure.

Please be careful deep frying at home. Never fill the pot more than 2/3 full (3/4 absolute max) and keep either a fire extinguisher or baking soda near by just in case. When a homemade deep frier overflows it can be bad, if you get a grease fire and throw water on it, it will explode so please be safe when doing this for the first time
