We agreed on a price prior to the work being done. His work was impeccable. It came out to about $29/hr when it was all said and done. Just keep being loud about it so it's at the forefront. Denver restaurants are struggling hard with (additional) city taxes and rent. Restaurants in ski towns are struggling because of unaffordable housing (Denver too) and tourists are opting to cook in house instead of going out to eat. Make the reps realize what a huge issue this is. I hate that it's true but those who scream the loudest get listened to.

Shared a table at Benihana with Robert Mathis and family. The Friday night before Peyton's return to Indy as a Bronco. The Mathis family was just like any other family that had a gaggle of kids. We acted like we didn't know who they were and just made polite small talk.

Ideally you don't need the wasabi bc the fish tastes so good and there's usually a little bit of wasabi on nigiri already. But if you need to add more, just put a tiny dab on the fish with your chopsticks. Make sure you dip fish side down in soy sauce. Not rice side down. Have you heard of the documentary Jiro Dreams of Sushi? If you're ever down for reading a movie in subtitles, it's pretty awesome and really drives home the "art" of sushi.
