Did the heat outside cause issues with the dough over proofing?
Not really, I took that into consideration when making the dough and put used a tiny amount of yeast. The dough balls were actually better to work with after being outside for a few hours than when we first got there
Do you have a recipe somewhere? I swear my dough balls are near useless after sitting just for 3 hours at room temperature.

Pop-ups aren’t really huge money-making ventures. It’s more for fun, market testing, etc.
I’ve done maybe 100 pop-ups in my life and even when they crush, I’ll make like 500 bucks.
Given the amount of work involved, the hourly rate is pretty low.
Well I mean most brick and mortars aren’t either but at least a pop up like this isn’t paying rent, utilities, etc
yeah if we are looking at 40-50% profit and you can push 250(after cost) for a noon to 10 pm shift and get 25 an hour. Probably worth your summer in weekends.

Factoring in propane, all ingredients (food cost is typically 25-30ish %), any labor if he had help (I usually have someone take orders and collect money, etc.) Also, to-go pizza boxes are surprisingly expensive. If he used really ingredients, he could get it lower, but nice pepperoni, 00 flour vs regular bread flower, etc…
You can definitely swing ~50% if you have little to no overhead.

Congrats on the successful event. Aa you've seen its not easy, but it can be personally rewarding. Five years ago I took my passion for ice cream making and started a business that has grown to three locations, a dairy plant (also make butter) and have now won awards for the best ice cream and butter in my country and have also won some international awards too. I haven't had a moment's rest during summer since launching but wouldn't trade the experience for the world.

The inspectors get interested when they get the pop-up's information from legit food trucks or restaurants who don't like the competition. All they have to do is look at the pop-up's social media for a calendar.

Seems like a lot of work for $600. But as long as you enjoyed it, that’s all that matters.
Pop-ups aren’t typically done because they’re big money making ventures. My buddy owns a bar and I do pop-ups there like once or twice a month just for fun and to help him out. As long as I don’t lose money, I’m good.

If you can figure out the math, a $1 cash discount is always a better move than a $1 credit upcharge. Also many card processors prohibit charging extra to take cards in their ToS, and if they find out they are liable to deny you service.

I’d buy a whole pepperoni for $20, sell half the slices for $4 each (1$ cheaper) and eat the other half of the pizza. At 8 slices per pizza, my half of the pizza would only costs me $4 and the people I sold to all saved a dollar for a single slice.
At six slices per pizza, I’d still get 3 slices of pepperoni for $8. Win/win.

Accepted to cook for a buddies 4th of July Party. Personal Pizzas, Hotdogs and Smashburgers.
Looking at making about 40 personal pies. Just got all my ingredients (King Arthur 00' recipe followed by their bag) but I'm wondering my best way to prep and store the dough. It says to leave at room temp for 16+ hours but a buddy wants to help me prep a day or two before. How would you all go about storing? Just hit me that I can't fit 40 pre-made doughs in my normal household fridge lol
