Coworker thinks I am a perfectionist for reminding them of safety rules we have to follow. They got mad and sad this with rude sarcasm. I have a feeling she'll say it again soon.....

I wouldn't even use a comeback for this. I'd just tell her she's not required to be perfect, she just has to follow the safety rules if she wants to keep her job. Most safety rules exist because someone has already died, has been injured, or has spread a disease doing that exact same thing before (not at that particular company, just in general.)
