I have an empty space for a refrigerator in my laundry room. It has turned into a dump all for shoes and random outdoor toys! My initial idea is to make it into a cubby for coats and shoes including hooks, a bench, maybe some pull out basket underneath... but the depth of the space is confusing for me. It is too deep to put hooks in the back for coats. Anyone have creative ideas??

I would go with a walk-cooler or freezer. You will thank me once summer hits, it’s going to be a hot one.
It's nice and deep, put in shoe drawers that slide out in the bottom half. Frame in a sweet hidden space for valuables or a wall safe in the top half, put a coat rack in front so it's the right depth.

Instead of hooks for coats, put a closet rod and hangers. Though personally I'd put a freezer there. An upright freezer would be a great way to stock up on extra food.
How deep is it? If it's 2', that's the depth of a modern kitchen cabinet. Figure out the combination of cabinet widths that'll fit the space closest. If you've got an Ikea nearby go get them, or see if Ikea will deliver. If not, you can do the same with RTB cabinets (but you'll pay a lot more to get full-extension heavyweight all-drawer cabinets).
Above those base cabinets is where I'd hang coats on the side and put shelves at the back. You'll want to eyeball your shoes to decide whether you'll want 15" or 10" drawers, or whatever else you plan to store. If you have a lot of boots, go tall. Otherwise I've found 10" is usually sufficient.
I know people diss Ikea cabinets plenty, but if you're not going for super-fancy magazine-spread and just want something that'll last and hold up to regular beatings, I've yet to find anything more affordable than Ikea.
It's actually just over 3' deep! Which is why I've been having issues with how to utilize and not lose all that space in the vackm cabinet configuration is a good thought though
That's huge! What's on the other side of that wall? If it's not an exterior wall, I'd break open the back and give the next room a set of 1' deep shelves, and leave the remaining 2' for the laundry room. I managed to carve into enough deadspaces in a 1400sq ft house until it had the storage space of an 1800 sq ft house, this kind of add-storage-save-space is my favorite jam.
If it is an exterior wall, then you just move everything back a foot. That may seem like you're 'not using' the extra 1' depth, but you are. You're using it to allow for a slightly greater width to reduce traffic jams between someone using the laundry and someone opening a deep drawer to its full with.
(The trick to making a small space feel big, ime, is to allow as much room to maneuver as you can. Even a huge space can feel claustrophobic if you have to exhale and hold your breath to get around everything.)
Just put a horizontal bar halfway in with some hangars for coats. Bottom half can always be a dirty laundry pile zone.
Make your shelving L shaped (going around 2 of 3 sides) then you can hang the coats near the front.
Get a closet type of shoe drawer that retracts out from the deeper area of the spot. Then you can easily access the shoes. Or install those trendy “wet room” lockers for shoes and coats, outdoor stuff. You could paint the interior white to make it brighter in there. Install a permanent fixture light or just a motion activated LED that is battery powered.
You could add shelves in the back for those little used items. A closet rod in front of that and drawers on the bottom. If you could figure out a lazy susan situation that would be cool.
What's on the other side of the wall? My first thought would be too look there and see if you could just reclaim some or all of that space. A 36" bump is a big one.
Other than that, I'd put a door on it and treat it like a closet. Built in, pull out type stuff can help, as can shelving that wraps the three walls. Given the laundry room location, this seems like a good spot for bins of seasonal storage stuff (winter gear in bins for the summer, etc), and of Costco-style bulk purchases (mega packs of TP, etc), and of cleaning supplies like mops, vaccuums, etc.
Entry to your safe room
Install deep shelves on heavy-duty sliders, 3/4" minimum plywood to hold some weight. Install bifold door in opening.
Before installing shelves, consider how you will use them and space accordingly.
Will you store items in plastic bins? What size? Canned goods? Paper towels/toilet paper? Cleaning products? Sport/rec equipment?
Alternatively, you could install shallower fixed shelves in the rear, say 18" deep, and add hooks on side walls for coats or tall items like mops/brooms, hockey sticks, ironing board, etc.
First I’d have an electrical outlet installed inside that nook. That would allow you to hang your vacuum in there. On the other two walls, I’d install “L” shaped shelves that could be used for a pantry or anything. If you want to hide it, install a door.

The space is wide enough. For a cheap option I’d probably put a set of shelves/shoe rack on one side. Something like this one from Bunnings. Or a sturdier version and leave out a level or two at the top to make some taller shelves to store other things on. Then on the other side of the wall put coat hooks. Hide the golf clubs at the back behind the coats, or top shelf of the shoe rack.

I would put a shoe storage rack in the back, a bench in front and long pull out drawers under the bench. Maybe a couple of coat hooks along the sides if needed. Nice little nook.
