Obviously this will never happen (there would be a riot outside of Mojang HQ), but hypothetically, the Java Edition gets discontinued permanently and they only focus on Bedrock Edition, a version that lives in infamy in the current generation. What happens now?

IMO I doubt it. Modding is a hobby for the majority of them and there's already enough fracturing with Fabric vs Forge vs Neoforge.
I don't doubt it. Those modders could go wild with everything. Dedicated websites outside of Curseforge and Modrinth would be started soley for that Developer's version.
Depends on how Mojang "ended" Java too.
There's literally no way that Mojang can end Java edition in a way that kills mods. You don't need their official launcher or download page to run the game. They'd probably have to start taking down all java edition YT videos for it to even start to make a dent. Modders would have a much easier time creating the parity features that Bedrock has due to not having to come up with the ideas and not having quite as much QC as an official game would have. A small team might even be able to manage to get Patreon donations (or another similar site) if their mod was endorsed by Youtubers to be able to develop it full time. In this case a version would probably be released for every major modloader but Fabric would be prioritized.

A lot of those issues would die down dramatically since people wouldn't have to work on different versions of Minecraft. The majority of modders would move to whatever the last version was, and it'd soon be clear as to which mod loader is best (or at the very least which ones not to use (there's like 5 others you didn't mention)). Modders would also be able to make significantly better mods now that they don't have to worry about updating them to newer versions.
The mod loaders could be updated to the extreme now that they don't have to ensure future compatibility, and honestly everyone could just go wild to their hearts content.
Worst case scenario Minecraft slowly becomes niche after a decade or so. Before that waould be a hell of a party for players and modders alike however.

I would imagine that but a billion times worse. As they discontinued the original version of the most popular game of all time. I think even some people on bedrock would think that was a stupid move.

Sony doesn’t have anything to do with Minecraft though. Outside of the PlayStation version, of course, which already requires a PSN account in a very user-unfriendly way.

You cannot “unlink” the PSN account. If you’ve ever watched this subreddit, every few days there will be a post of PlayStation players that have lost access to their Microsoft account and can no longer play because they can’t sign into a different Microsoft account without also creating a new PSN account.
You mean like when Microsoft forced us to migrate our accounts from Mojang to Microsoft accounts and wouldn't let us double up? I lost my alt account in that move.

How do you mean? The launcher shared all the same files. The main loss was my ability to be anonymous on a server where my main was well known/be a normal player when I was an Admin

No, but I did pay money for the alt. I think that's plenty reason to be unhappy about losing it
As a Minecrafter and Helldiver, my thoughts exactly. We’d treat Sony like the practice round and throw down, lol.
People will continue to play Java and others will mod the shit out of it to include the updates.
Java is their bread and butter but Bedrock is their cash cow. Seeing as about 95% of YouTube content is Java, they'd lose a lot of publicity overnight. Most popular SMPs would cease to exist as a lot heavily rely on the customization of the game.
One of the other block games, like Vintage Story, would see an exponential burst in growth, and would attract a large percentage of the playerbase. Minecraft would likely remain on top for awhile, but their competition would become a lot more relevant.
I highly doubt anything can ever reach even close to Minecraft’s popularity and relevancy, even if all development stopped. The community, both influencers and modders, is too big.
Then I keep playing the final version "indefinitely." I haven't been super stoked for where the game seems to be headed, anyway.

They would probably have to prep Bedrock, because a lot of people would move to it, and it might not be ready. Patch all the major bugs, invest in the Realms servers, add an official modding API. Otherwise, it just...wouldn't work.

They also work more about parity in bedrock edition, they also want to upgrade graphics for everyone with deferred rendering, they also added an editor, they are relooking the menues... Si they do more than that 🤓
It would be a crazy situation but Minecraft would loose alllllooooottt of players thousands of people play java for the redstone alone and I’m not even gonna mention modding
Depends how they do it. Ideal scenario is they create complete feature parity between the two versions, make modding just as easy if not easier on bedrock, then pretty much everyone naturally moves over and they discontinue the old one.
older versions on minecraft still exist, they cant just delete them from people's computers. Assuming they don't even let you download them, there would be a mass exodus of people pirating the game, all java servers worth their shit would switch over to Bedrock, but some would likely remain, however treacherous that may be with the lack of any official mojang suppert. Any updates made to minecraft bugrock would immediately be modded into java, probably with greater efficiency. realms would be gone, and since places like minehut would have drastically reduced player counts, they'd likely be unavailable as well. So, any multiplayer would have to occur through your own server youd have to run.
Overall, itd be annoying af but there'd still be a massive community, just more segmented, hidden in the depths, and requiring a lot more self sufficiency
Hello I was like you before, but the first time I played java I was so disappointed that so much of the bedrock stuff we're used to was missing, and I was more disappointed I'd heard it was much better when in reality not that much.
