The ground sirloins have been big hits whenever I bring them to a cookout. Perfect combination for a burger.
One of my go-tos for a quick (relatively) healthy dinner- I’ll sautee onions and mushrooms and cook up the patty (no bun) with a tomato and cucumber salad. Takes all of 10 mins to prep, and actually isn’t that unhealthy.
May we ask what is your recipe for cucumber salad?

My family does that and feta cheese, olive oil and vinegar, some oregano and salt and pepper. Makes a great Greek salad and I LOVE the ones I make with my garden veggies
Mom always added julianned red onions to hers. And tossed in the lightest amount of Italian dressing or red wine vinegar + olive oil.

Problem is burgers need more fat! I found the sirloin too lean but that’s just me.
100% this. Burgers are one of my favorites and the ground sirloin patties are just too lean. Blue label is the best for sure.
Depends where you’re cooking them, if I’m doing the grill I’d prefer the ‘black label,’ but sometimes my son just wants a burger after school or a game and I prefer to throw those on cast iron inside, the black label causes me to basically fry the burger aT that point- I’d rather the sirloin for those

I find they are too lean as well just as patties but with cheese have a good mix of not too greasy. My family likes them as patties and rice, but it's very easily overcooked to the point they are dry.

Sirloin is my go-to! It's a specified cut vs. the less desirable cuts being ground up and processed into patties. Can't wait to try the wagyu patties if they're affordable!
Blue is our go to for burgers. The extra fat keeps them tender and moist. Just sprinkle a little Lawry's seasoned salt and they're good to go.

Bruh, put the Montreal in a battery powered spice grinder and it’s perfect. My kids love the flavor but hate the big chunks.

FWIW, a hand crank coffee grinder like a Hario or cheap knockoff usually has better burrs, more capacity, and much finer adjustments on size. They're perfect for when you really need to crank out a bunch of fresh ground pepper or other spices.

I just use Johnny's Seasoning Salt. I put it on most everything :-)

We use these monthly at our bbq here at work. Our preference in order:
Blue -> Red -> Black -> Grass Fed.
Grass Fed had a gamey flavor literally nobody liked. I cook for 20 at our monthly bbq's and that one I got a lot of complaints about.

Agreed. I buy the blue patties just so I can toss them on my ninja foodi grill on nights i dont have time to cook. Otherwise I prefer to just make my own patties as its about half the price to do so. Also its good for when my niece invites random friends over to the house to use the pool in teh summer, and i can grill up a few burgers and dogs at a moments notice. When we have massive 20-40 people bbqs during the summer, i tend to stick to home made patties.
I'm curious about the half the price comment. I've observed the frozen patties to be less expensive than the ground beef. What am I missing?

Depends on where you get your ground from. My local butcher has ground beef cheaper than Costco and they’re willing to toy around with the fat mix for me to get me what I want.
They are not less expensive where I am. 6 pounds at around 4.50 a pound for 75/25. My local safeway has sales constantly for 2-2.50 a pound for 80/20. I get the chubs and vacuum seal/freeze for use later.
I like to keep those on hand for when I need to fix my son a quick dinner that he isn’t going to be too picky about

Idk if I'm just different but I think the grass-fed ones taste way better. I always get the cheapest options and I got them on accident once. Never going back.

I haven’t tried these because I just don’t have room in my freezer for most Costco-sized frozen foods (chicken breasts and some dessert items are about all I’ll buy frozen), but I like the Bubba Burger grass-fed that come in 4 packs. They’re perfect for my situation.

Grass-fed doesn’t excite me too much. Maybe rosemary-fed, pre-soaked in A1 sauce. Still waiting for mayonnaise-fed farmed tuna too. Follow me for more thought-provoking culinary ideas.
Haven't tried any myself, but I wanted to buy something I could defrost and cook up one patty at a time for my tiny dog. I debated over all of them and finally bought the grass fed because it sounded healthiest.
She's a picky eater and won't eat plain dog food, so I give her about 1/4 of a burger mixed with her dog food and she really likes it. Maybe she likes the gamey flavor. Of course, who knows, she may like them all.

I thought the grass-fed ones were just OK. Frankly my favorites are the red ones, but my people have spoken and they prefer blue, so blue it is.
Oh man, I love that flavor in the grass fed patties. I can see it being a poor choice for a larger group like that with varying tastes.

I wasn’t a fan. They were good, but not worth the extra money for my taste.
Just bought some yesterday, I normally don't buy Patty's but saw this in the corner of my eye and snagged one. Excited to try. Did the pre-made meatloaf tonight. Not bad either!
Black are the only ones I've ever bought, my dad grew up on a farm, then went into meat sales after getting a master's degree in animal science, I always ask him about meat options. (Partially because he likes being asked) He told me the ground chuck would have the most moisture for smoking, so that's what I use on my pellet grill, never had any complaints.
Moisture is just fat content. But Chuck definitely is my favorite flavor for burgers.
Worth noting, Costco has some of the, if not the, highest quality standards for its ground beef products. The beef gets tested very frequently throughout processing for microbial contamination.

That's pretty standard for all meat operators, its actually a legal requirement. Their source is likely one of the big slaughter houses like Cargill of JBS, which also supplies other restaurants and businesses. (in Canada)
I’m told Costco has higher standards than average. QA inspectors visit suppliers frequently.

My understanding is that there was a pathogen breakout somewhere in the country (perhaps, ecoli or something) and the CEO asked the head of their meat department how they could avoid such a thing at Costco and he said that the only way to safely do it is to process the meat yourself and inspect vigorously. Paraphrasing, of course, but something like that
They might go above the minimum requirements, but so might others.
I guess my point was that their source is already pretty safe.
That isn’t a Costco standard, that’s a USDA standard. Literally all meat products are subjected to that.
Ground sirloin ones are the best if you use some worshisister sauce on them while they are on the grill.

Thanks for noting that. Reading comments I can’t shake the thought that I usually can detect and don’t much care for frozen patties. Do you cook them straight out of the freezer or defrost first?

I was excited to try the grass fed ones a few years ago, but ended up not liking them and they just sat in the freezer forever until throwing them out. I think they were gamey..? Can't remember specifically but something was odd about them. Blue is my favorite.

I tend to prefer grass fed as it's closest to what I ate growing up. Grew up on a small family dairy farm so cows were basically raised on a mixture of grass, alfalfa, and corn.

I read once that all of the best beef and all of the worst beef is grass fed. I think that's really true.
Good grass fed beef is amazing, but the bad stuff tastes gamey. All corn fed beef is solid.
The “good” grass fed is corn finished. They eat grass for most of their lives and then nothing but corn in the last month to add some fat and reduce the game flavor.

Not gamey. I buy these (because it's healthiest) and I'm very sensitive to gamey flavors (which is why I shy away from lamb, venison, etc.). I wonder if it makes a difference which state you live in, though, or if all the grassfed beef is sourced from the same place. I'm in Northern California.

I've had the blue and red. Both good. Sirloin is leaner so a better protein calorie ratio. But they are a little bigger so bun size should be a little bigger too IMO.

There are dozens of us. Seriously though, they are an amazing price for grass fed. I season mine with Penzy Northwoods and they are amazing.

I think we did 1/4 lb for a scout campout. They're good for things like that, gatherings with mostly kids. They cook a bit faster of course, less likely to end up with half eaten burgers, but they dry out quickly (should be stored in a pan of broth when done)...

I think they all slap. Grass fed does have a flavor to it but my wife and I like that. Haven’t tried the new grass wagyu yet. Better than any other frozen patty I’ve tried by a long shot.

sirloin (and loin of beef) patties are in my freezer — haven’t tried the others, but these grill nicely.
Was disappointed to find the Angus didn’t taste right and had an almost rubbery texture. Haven’t tried grass fed. The sirloin and regular ground beef taste the same to me, so we grab whichever is currently cheapest.
Toss on the grill with some Johnny’s and a dollop of Sweet Baby Ray’s and it’s perfect, every time.

Had been going grass fed. But just bought my first 10 lb roll from the butcher. Honestly the way to go break it down into 1lb quart freezer bags lay flat and freeze. I just slice it into 4 on the griddle or scramble defrost quick too. Cheaper and leaner

The only thing that matters is 1. is it grass fed (its more gamey imo) 2. fat content. 3. courseness of the grind. 4. size of patty.
Otherwise it doesnt matter. Its a gimick to say "Angus/wagyu/chuck" etc. Its ground. You lose all texture of better cuts of meat. Thats the whole point of grinding. You can take the leanest, toughest cuts, grind it, add fat to the grind, and there is no difference in the burger.
Sirloin is our favorite. Just picked up another bag at our weekly Costco trip yesterday.

I just grilled the grass fed, I thought it tasted pretty good, I didn’t noticed a gamey taste. I guess I’ll have to try the blue next time.

All crap IMHO. Have them for every work BBQ. Best opinion I've got is that some people don't like the flavor of the grass fed.
pour steak dry rub on it, grate onion on top, in the oven with 380 for 25min, when done remove onion from the top, put American cheese and enjoy the way you like
