If they feel the need to put you down as you are leaving, it is because they take your leaving personally and are offended. They are lashing out in anger. Thus is their problem and not yours. You don't have to insult them back. What would probably have a more powerful impact is to ignore the insult and just express your excitement for the new job and the opportunity to grow and face new challenges there. You can even tell them if you feel you have reached a plateau at your current job and feel you have no opportunity to learn anything new there. I've had that happen and I've been honest with employers about it. That explains your position (if it applies) and also steals the thunder out of his petty barb.
