Thanks! Since regular biscuits usually call for buttermilk which can be too wet in gluten free dough recipes (as opposed to something like pancake batter) I used yogurt. It’s definitely not as flaky as a regular biscuit but is still pretty buttery with a good crumb structure. Also making sure not to over-bake helps - that way it doesn’t fall apart!
