It's a core dynamic of the game. I've been playing since gears 2 and every time I get bodied by someone who's wall bouncing it pisses me off but that's because they're better at the game. It's what makes gears, gears. Gnasher and wall bounce are a core dynamic. Just like two-peicing (melee-body) was before they removed that. Get good and stop complaining.

Offer to pay the fees seperately and see what they say. I'd only pay a security deposit once there's a signed contract from both parties.

Folders: Super debateable but my team uses a feature based organization where every feature is encapsulated within a package. I prefer this structure in case the business every wants a rewrite or white label app. We use Melos to support this as without Melos managing dependencies becomes difficult, https://melos.invertase.dev/~melos-latest
Widgets: Flutter (this is where Flutter kicks ass). Create a well defined design system with your designer taylored around reuse and you'll be good.
Routing: GoRouter. Built in Navigator works fine with nested Navigator instances but GoRouter is IMO cleaner.
State Mangement: Riverpod, BLoC, Provider. Riverpod is the v2 of Provider written by the same engineer and is great. Avoid GetX unless you want to shoot yourself in your foot or are just building a POC you don't have to maintain and just want to learn/mentor something you'll end up fighting eventually.
Themes: Font, https://pub.dev/packages/google_fonts; I haven't had much fun cramming design themes into material because unless your designer is playing by the material design rules 1:1 it's not going to work. What I find that works best is to create extensions on themes for reuse.
App Settings: Not sure what you mean but for app settings my team uses encrypted shared preferences or just shared preferences to persist in-app user settings.
Originally my team ported over native projects to Flutter and lead with a CQRS style reactive architecture with RxDart and GetIt as this was what the native teams were familiar with. This was a mistake. I'd highly recommend building your project around Riverpod (state) and GoRouter (routing) coupled with the repository pattern. This has worked great for my team as it's a common framework and pattern making it easier for onboarding new resources.

You get rid of wall bouncing and you either end up with a 3rd person CoD or something that just doesn't work consistently.
Wall bouncing is a core feature of gnasher. Gears wouldn't be the same.

Same man, people who are complaining can't wall bounce. I've been playing this game since gears 2 and it's something i've struggled with forever. When properly done it's epic. I feel like most people complaining are n00bs. You get the kill, you win. That's it!

Look, if people can't wallbounce it means there's another dynamic to the game they haven't mastered (just like me). Please for the love god don't get ride of it like they did with two peicing in gears 2 (melee then body).
It's somewhat trivial to detect emulators on mobile. Very difficult to detect with physical phones. Couple this with a dedicated VPN on each device and it's very difficult if not impossible.
