I started a travel agency a year ago. I deal with travel advisors abroad and basically they outsource their trips to me in the country where I live. On top of trips, I now operate also as a conciergerie from high net worth clients. I got several referrals recently so it's become very tricky to handle all requests promptly. Therefore I want to hire someone to support me. However, I want to avoid that this staff member at some point leaves me to start his own business and steal some of my clients or potential future clients. What I do require a certain expertise on the country where I live but overall, anyone with a bit of business acumen and basic skills can do it. There's no investment in assets, software, etc. needed.
Therefore, the one million dollar question that I've been asking myself is: how can I hire someone who will not leave me after a few months/years and start competing against me?
Overall I think this applies to many business of intermediation/services.
Curious to know your take and any similar case.

I’m in my early 30s (M), looking for a warm place to avoid the gloomy European late Autumn.
