what launch monitor? it's entirely possible that some of your data is unreliable. always take ball data more seriously than club data.
but yeah it sounds like you're just not releasing the club, so you're coming through like a tennis backhand. the club may very well be rising, but that doesn't necessarily mean it will have more dynamic loft.
you have a really good problem (basically the opposite of most people) where you need a bit more height and have some spin to spare. you can either make a small technique adjustment or loft up. i'd go for technique personally but that's your call.

You can bend a club as much as you want to get it to do what you want. There isn't some rule about it

I do everything I can to get rid of offset. My 53 is a 50 bent up 3 deg. My 58 is a 56 bent up 2. Both have straight necks now.
Offset is gross, and even moreso on wedges. It boggles the mind that manufacturers put it on their wedges.
so you were just in your own head before. sometimes being distracted or thinking you don't have it makes life easier.

Also conditions. think terrain in golf, lies, wind, how firm or soft the course is. You have to adjust for quite literally everything
Driving is the same. Different pavement, on camber or off camber corners, rain, tire temperatures, wind, the whole bit.
You'd learn nothing of any of these in a parking lot the same way you'd learn nothing of the complicating elements of the golf course at the driving range.
And nobody is using anything even remotely like it. Which is why it's weird.
