You want R vinbar and Apéro. The best "conventional" wine bars in the city. However, there is generally more focus on old world wines in Denmark, rather than new world.

If you use the Skånetrafiken app you can buy a ticket in the app and activate it whenever you need it. Why you would do this instead of buying as needed I don't know, but the option is there :)

The biscuit should indeed be on the dry side - i was thought to only let the bottom of the biscuit touch the coffee and then pull it out. It will absorb moisture from the cream making the cream itself a bit sturdier.

I also want to check that your mixing your mascarpone, sugar and egg yolks separately and then folding in with whipped egg-whites, as this will help the stability of the cream. If you need even more stability, you should make a zabaglione with the yolks, sugar and a splash of whatever alcohol your using in it (which I think you should), heating it up, thereby further strengthening the cream. The latter entails the best results in my opinion.

Let the tiramisu rest overnight so the biscuits are hydrated and the tiramisu will be perfect.

Correct. And it is, in my opinion, the by far best season.

Noma dissed Obama when he was in town, during his presidency. Doubt they keep tables for bigger celebs ;)

Because Orisa is fun to play as. You don't need as much support from your backline to survive, and you can absolutely bully the living shit out of the opposing team if you manage you cooldowns. I really don't get how people think she isn't fun. OW1 Orisa on the other hand, that was dull af.

Fragile, compared to metal, and awful heat distribution. I can't really see any upsides at all. Why choose Pyrex over metal?

Koan, and it's not even close. While I adore Kong Hans Kælder, and Kadeau is a masterclass of new nordic cuisine, Koan just hit different. It's a must go.

Punk Royale with friends is super fun. It's hard to really describe, but the food is awesome (approximately a one star level) and the vibe is amazing, and it's just a big party. Just make sure you don't have any early plans the next day. All times I've went there the night ended shitfaced with random people at a smokey bodega somewhere and I woke up the next day with a huge hangover.

That is completely incorrect. I live in Copenhagen. The norm is no tipping. Most/many places don't even give the option to tip.

As a general rule in Scandinavia, no tipping is ever required or expected. You can round uo the bill if you're feeling generous or want to highlight good service and give at an absolute most 10%. But really, absolutely no need to tip, at any place (even if the card terminal gives the option).

Agree. The perfect dish for tenderloin trim.

There aren't other places at that level in Malmö specifically. With that said, Malmö has quite an interesting restaurant scene going on, but if it has to be at the very fine dining level, Vollmers is the only place. If you don't mind getting quite a bit out of town, I'd look into Vyn if I were you - Daniel Berlin's new restaurant in Österlen.

But Vollmers is a great place.

I enjoyed it very much. Definitely a solid two star experience using local Scania ingredients and traditions. Service was spot on, albeit a bit familiar if you're not into that. Wine list was, at the time I was there, nicely curated and well priced. I can nothing but recommend it.

So yes, definitely worth it. But the question is what, if, you're choosing it over something else.

I was extremely impressed by Desde 1911. One of the better seafood experiences I've ever had. It has the same groundedness as Elkano in that they only cook whatever makes sense of what they have that day, but with a more luxurious flair.

Visited Candlenut, Labyrinth and Esora i August. While candlenut was tasty, I don't consider it to be at the same fine dining level as the other ones, as is reflected in the price. But given the price, it's really good, and a fun thing to try as it's one of few peranakan restaurants, and the only at a higher level. Labyrinth was really nice, liked it a lot. Especially fun as you try fine dining versions of foods you'll be eating anyway when running around hawker centers. I'd recommend you do labyrinth by the end of the stay because of this. Finally, Esora was my and my wife's favorite, just going by the food, and their tea paring was amazing - but it's not specifically Singaporean/local of course, but not euro either.

As well as white currants :)

We always continued with the mutations and with permanent damage to attributes. Going with the whole glass cannon/eternal decay of the body principle. I think it works well in the mutant universe. However, we usually went with that from mutation 3 and upwards, they couldn't choose which attribute to take a permanent damage on, instead they had to roll for it. If they die, they die.

Goldfinch is absolutely fantastic and a great choice for date night. Don't worry about finding a better spot.

There are many other places that are fantastic in Copenhagen, but Goldfinch is one of them. You made a good call.

Don't miss out on their fried eggplant. And their cocktails are amazing ("The diner concoction" is amazing, and pretty wild).

None that I know of. If by cod you mean dried and salted cod (bacalao), you can find it or order it at better fishmongers or online. Search for "klipfisk".

High tables and bar will give a view of the cold kitchen. I'd choose one of those. But honestly, it's a small place and it doesn't really matter where you sit. Enjoy it!

Jordnær is definitely better, and the one I would choose if I only had one. But MH is one of my most visited fine dining places in Copenhagen, and I really love the place. It is at a solid 2-star level in my book while Jordnær is a definite 3-star (and the best in town after Noma for me).

The style of both are pretty similar. Nordic with a clear Asian influence. Jordnær skewes more towards a Japanese influence while MH are more liberal with theirs, and also allows for more aromatic dishes while I think Jordnær plays more heavily with richer umami focused dishes.

But you'll be happy with both places :D
