I'm a fan of both parks.

My pick would be Animal Kingdom, but it sounds like you might like Magic Kingdom (Tron) or EPCOT (Cosmic Rewind) more. Here's my take on each... 

Magic Kingdom - This is where you get the castle and the most Disney of the Disney experiences. It's also the most crowded, for that reason. Huge park with lots of rides. Space Mountain, Thunder Mountain Railroad, Seven Dwarves Mine Train, and Tron are going to be your roller coasters. I recommend checking out Pirates of the Caribbean, Buzz Lightyear, Jungle Cruise, People Mover, and Haunted Mansion, even though they're not thrill rides. Grab a Dole Whip at Aloha Isle.

EPCOT - This is the park that caters more to adults. Check out the food and drinks and live performers in the World Showcase. Yes they're slow, but Spaceship Earth and Living With the Land are quite nice. Cosmic Rewind is of course already an interest. 

Hollywood Studios - Star Wars. Definitely do the Star Wars rides, if you're a fan. If you really want to spend some money, build a light saber or a droid. Try the blue and green milk, but also maybe try a ronto wrap. Or head on over to the ABC Commissary and grab a Buffalo chicken grilled cheese. Slinky Dog is going to be worth your time, and Toy Story Mania is pretty fun, too. Mickey and Minnie's Runaway Railway seems to be divisive. Some love it. Some hate it. Try it once. 

Animal Kingdom - The most laid back of the four parks. It's a zoo with benefits. Honestly, I love exploring the animal trails, seeing the love shows, and doing the Kilamanjaro Safari. Expedition Everest and Flight of Passage are the two big thrill rides, and they're pretty good. Satuli Canteen for lunch.

They're LOUD out here in Springville. 

Food and drinks, easily. The regular offerings are pretty good, and if you're not much of a drinker, the cost of a few drinks isn't going to set you back nearly as much as the beverage package.

The only thing that irks me about headlines like this is the assertion that it's an issue "in the South" and (implied) only in the South.

In reality, this is an issue all over the US, and to a greater extent, well outside the South. New York and California in particular are among the most infamously segregated schools in the country, with New York being right at the top.

Alabama absolutely has issues, along with the rest of the South. But headlines like these aren't helping the overall problem as much as contributing to the problem. Focusing only on the South as the problem is how many Northern states got to the point where they had the most segregated schools in the first place. You can't fix a problem you refuse to acknowledge.

That is definitely a problem in the Catholic Church, but it's not a problem with the pope.

Evangelical Protestants have been having similar issues for years. 

It's not a Catholic school teaching, and the people using that talking point need to stop.

This isn't a standard Catholic viewpoint. Even the nuns who co-founded the school in question have spoken out about it, and I would say that their opinion in this matter is very valid.
