Makes sense, it's nice that its costs are tiny compared to a tank of gas. In my area, Vancouver in Canada, hydro/electricity is cheap. If you can charge at home, you're saving a lot of money with an EV, not to mention that you get a generous government rebate on cheaper EVs.

You use GBP, so you must be in England, your hydro is 230V single phase standard. A wall outlet at 230V will provide enough amps (assuming an adequately sized circuit) to charge an EV fast enough. In the US and Canada, regular outlets are 120V single phase. We use a split phase system (two phases 240V) for our clothes dryer circuit. Installing a second such circuit adds a lot of overhead to getting a cheap EV. It may even make it not financially worth it.

In a STEM field. The way I see it, it's my years of lost income because of grad school combined with not getting the higher starting salary of a PhD graduate or a postdoc.

That's a good idea! And you can also buy bags of whole chickens when on sale. As soon as you get home, chop them up and separate the parts in ziploc bags. So you can cook meals of only breasts or only drumsticks. The bony parts, save them up for a soup along with vegetable ends.

To shop more economically, you need to buy what's on sale. You can either decide what to cook based on what's on sale this week or buy whatever is on sale now and save it to use later. This only works if you have the space to freeze meat or have the disposable cash to buy extra meat.
