So you get xp for new dialogue you've never clicked on, and after clicking that, it no longer provides xp. I haven't beaten the game yet so I can't say if there is or isn't enough dialogue to max speech, but the only other repeatable methods I know of would be passing a speech check on a guard and bartering with the perk that makes bartering give xp.
My absolute best recommendation is get to 2540 gold and go down to Merhojed to buy warhorse Jenda before you get too far in the main quest. On my last playthrough I got locked out from getting it, and it's the best non-dlc horse all around. Crazy carry capacity, speed and stamina. You won't regret it!

I highly recommend soulflayer canyon, there's like 5 or 6 nests there thanks to the Harpys. Collect regular eggs, and sleep till golden. Just beware of the phantasms at the bottom level
