Hello all. I’ve been eating a vegan diet pretty much unintentionally for a long time. (Fruit, beans, quinoa, salad) it is unfortunately costing me a fair bit of money because I’ve been buying the beans an quinoa already prepared (lazy). Can anyone point me in the right direction in a view to buying and preparing these 2 things cost effectively please? I can find kidney and butter beans dry online but have no idea about preparing quinoa etc. Thanks in advance x
I soak big batches of dried beans overnight then cook them the next day. Only takes about an hour. Then l freeze them in can sized portions for when I need them.
Absolutely seconding this method. I have an entire drawer in my freezer just for cooked beans.
Awesmazing! It's great, right? I only need to do it once every few weeks & really doesn't take long/much effort. I'm lucky to have a vaccuum sealer so I can store them flat in the small freezer compartment, but it worked with containers too. I'll never buy canned beans again.
I try once a week with one different type of bean, so I can ensure a steady flow.
I usually soak 2 or 3 types overnight, them cook them all simultaneously the next day. It keeps me stocked up for a few weeks then I do it again when I run low - I love that it's basically set it up, set the timer, & go do something else while the magic happens 🤷🏻♀️
