Steak that I had yesterday at Outback Steakhouse. Raw or nah?

It's pretty good, but not for the price they ask...also where I am they inherently serve your steak a level rarer than you ask for some reason.
You can always cook it more if it’s undercooked for the customer. You can’t make it more rare when it’s over cooked.

I worked there for a bit during undergrad, they were a decent company to work for. Also, get the thickest prime rib they have, rare, "OB Style". They'll cut the slice then put their steak seasoning on and sear it on the flat top. It's delicious. Also, idc who you are Bloomin Onions are delicious.

Depends, but generally they are commercially as a tough steak is less easier to notice with a serrated knife than a regular one because even if it isn't sharp it will still saw through it with the teeth...kinda like in the OP I'm guessing. Higher end places tend to put more emphasis on a clean cut, but a lot of times they'll just do it for you in the kitchen as a presention thing and also you don't fuck up your Instagram post.

Depends on the cut/composition… filet is absolutely more tender rare.
I always thought the general rule of thumb was that fatty cuts are better a little more rendered and lean cuts are either quickly cooked rare or slow cooked wet for a long time

Absolutely not; fillet is super lean and because of the lack of fat you want to eat it rare so you retain all the flavor from that myoglobin. NYS is a good cut for medium rare as it's lean too but has a fat cap that adds flavor but needs to be rendered properly, and ribeye is a cut you're usually better going for medium with in order to properly break down all that tasty fat.

I actually like rare but always go for medium rare...simply because if I fuck up a little either way I'm still gonna enjoy my steak because if it's rare to medium I can happily eat it.

People who think this is raw lawl. This is not raw, dull knife made it looked all mangle but that's about it.
The thing with Outback, at least in my region, is they literally cook your steak one level rarer than you order, and I'm betting you OP was expecting a medium rare and they gave him a pretty damn nice looking rare steak while they think pink equals done and red equals raw.

yea idk how people think this is medium rare. The center of that steak is definately very red, and judging by how moist it looks, it hasn't dried out at all. It probably has a little bit of that moisture taste you get from a raw steak. Looks rare to me, but not raw. On a medium steak, the pink has a bit of a white tint, (this steak shows some of that quality but it's simply part of the grey band, and unevenly cooked.)
A large pink/grey band does not mean the steak is medium rare, you have to look at the center of the steak. It's just poorly cooked, and that's why i only eat steaks at home.

I dunno dude l, I consider my self a steak snob and I’ve never even been to an outback or similar but for that type of place this looks pretty slammin. The sear looks thick and crispy and grey band is quite minimal and a very light gradient. Yeah the knife fucked it up but other wise this looks like a quite good rare steak, especially from what is essentially a dressed up fast food joint.
