I had an insane boss like that. It was a whole family business as the uppers and one of the sons told me they’d even have the cameras on during family dinner watching nonstop

lol my bosses would definitely be checking the cameras on their phones right after sending that text and then check the payment logs if they see a staff member take it to make sure they paid for it. They issued someone a warning a few months back because someone ordered a pizza to go, paid over the phone, but never came for it. It was literally paid for and he still instructed us to throw it away. One of my coworkers ended up bringing it back to the kitchen so we could all get a slice, and the next day we all got a group text telling us that eating any food from the line while on the clock would result in immediate termination. Yes, I am actively looking for other jobs because fuck these people
this is how my boss is too - except he’ll allow his kitchen staff to eat the food we mess up on for free. if no one in BOH wants it? gets tossed. he thinks if we get to eat the mess up food, we’ll mess up on purpose.

It is because there are a hundred servers looking for jobs and it is hard to find and build a great kitchen staff. So you take care of your BOH first and foremost.
If you have shitty staff in the front or back the restaurant will suffer. A lot of is it management. Culture starts at the top.
I'll gladly go back to a place with great food and shitty service. I'll never go back to a place with shitty food because that's why I eat out.

As a sell-side cook, I have a rule that I’ll make anybody food regardless of what my restaurant wants. Everyone is full and ready to work, less grumpy, and fewer mistakes. It’s usually about two orders a day. Idgaf what the bosses say. When I got coworkers scraping for childcare or living in their car, there’s nothing on earth that would refuse people a meal
I work at a nursing home, and the kitchen will always give you free food, but at one point the company that owns the building (kitchen is contracted in) said we can not hand out free food at all. If we had that much left over, we are making too much, ie wasting. (Some days we have to go around and find enough for the residents. We always do, and it's good we are making sure we waste as little as possible). It's all about the money man, there's no humanity left in most corporations.
My most recent job stopped allowing the cooks to make us breakfast with our menu change even though i would be the only one there at 5 am and was starving. They said it was considered stealing even though they quite literally were stealing my tips and wages.

The world needs more of that and more of you. I haven’t been a server or that broke in 15+ years, yet I will always be a server and that broke at my core. You aren’t just feeding their bellies, you are feeding their faith in humanity, because to feed is to show love. That’s why I cook for people who need a dose of love from my home kitchen. And the only way I’ve found to sleep at night as someone whose needs are now met, despite knowing how many humans are not so fortunate, is to supply as much as possible to help stock a new empty apartment for someone who was recently finally able to move out of their car, any chance I get.
Thought I’d toss that last bit out there for anyone needing a manageable recipe for improving the world in some small yet meaningful ways within your limited means. You will gain more from it than they will, but do it anyway, they won’t mind.

Which is why I always gave my employees free food. I’d rather just see the food you want get made for than you “mess up” an order so you can eat. Better customer experience, and happier employees. Easy win for the company.

In my twenty six years in food service, I’ve only seen this happen a handful of times. Most people I’ve worked with end up getting so sick of the food they make or serve day in, day out that they will forgo the discounted food or even free food in favor of something different.
I’ve worked at places where you could get free food even on your off days, and almost no one took advantage of it after being there for more than a couple months.
I used to have a boss that would buy the staff half the menu (fully comped tho) but if her personal or work life was stressful, she’d write you up for taking dead food. She’d also get upset if you were anywhere near her while she loudly vented about very personal things. Bitch made no sense ever.

I hate managers like that. At one job my manager was younger than me. Having sex with a server. Which sadly everyone had sec with this man there cause he was pretty and had a big you know what. She would hide in the office on the computer door closed shoving her face with fries. Let’s see she was like 4 feet 10 chubby short blonde hair. Probably the first time a dude showed her interest. But soon as she found out we all were fucking him lol she would write us up for everything !!! Not the best memories of my life lol. But I worked there open to close for a few years. So like 9 am until 3 am pretty much. We had to pick and choose our battles pretty much. They closed down now tho

Some places do this differently. I agree with you, but one restaurant I was at insisted everything was voided, no comps. They could never explain why to me. The explanations made no sense lol.
The explanation is they didn't give a shit about their P&Ls. Because their %Costs would be janky as fuck.
That’s why I found it so odd. It was part of a ‘restaurant group’ and those numbers very much mattered. Every other restaurant in the group did it normally. It’s like they were trying to keep the #’s down.
I was there for one quarter to bring the staff up to par as they were having issues, and ended up having a pretty much record setting season, and nobody even cared haha.
Did you work for the place I quit last month? It was quick casual, and no comping, only voiding. Also no list for voids or comps, or refires or waste for that matter. Basically no real system for tracking those food/inventory costs and then corpos breathing down our necks for oUt oF cOnTrOl fOoD cOsTs!
This was about a year and a half ago in NJ. The thing is we had all that stuff available, they just chose not to do it. It made no sense to me why our numbers would be purposely fucked when compared to every other restaurant in our group. I mean, we ended up beating out a flagship restaurant that was 4x our capacity my last month there, we were KILLING it. It was the ‘bastard child’ restaurant of the group and in like 3 months, I had it turned around. I had way more I wanted to do there, but they shoved a bunch of money in my face so I’d go to a flagship. They then wanted me to stay there permanently and GM there but I wasn’t about that. I enjoyed my quarterly ‘consulting’ gig lol.
My district manager (he went by the new-corpo “Area Manager” 🤮) shot down every attempt me or the GM made to log the waste. Dude wouldn’t even let GM get a new ink cartridge so we could print out the prep waste log, the only waste log we kept.
Hah! You and I are cut from the same cloth. I used to do that for the last 3 years. One company called me their "Bulldog" while another one (run by old school mafiosos) called me their Button Man. I got that name after I fixed up the 2nd spot they sent me to by firing and replacing literally its entire MGMT team and 2/3rds of the hourly staff. They weren't just incompetent, but willfully negligent and fraudulent. Theft was rampant and food safety was non-existent. It was faster and safer to just start over fresh, keeping only the people who actually cared.
It certainly made turning around the subsequent restaurants faster. The rest knew I wasn't fucking around when I got sent to their store.
Yep! It’s a fun job! I found in that group that they actually had GREAT employees, but they were all being completely mismanaged. The more I looked into it, half the managers there really just didn’t know how to do it. Most of them were basically just bartenders that they gave a title and salary to. Every place I went that was a ‘problem’ was fine once I got there. I just made minor changes at most of them but then ran my staff correctly and they’d be on track like nothing. It was actually a cakewalk and I looked great every place I transferred haha.
It likely varies by location, but you pay sales tax on comps where I am, but not voids. Voids are supposed to be for items that were never made, comps for giving it away for free.

Your boss may be horrible but I know that it's policy in some restaurants to throw away food. It's supposed to be a deterrent to employees "accidentally" ordering food incorrectly when they're hungry or getting their friends to order food and never pick it up so they can take it home. Stupid, I know but it is what it is.
I find this weird. You don't get fed at work? I can order whatever I want when I'm working... As long as the kitchen isn't slammed, I can get food for free. More than one meal if I want. We also have a little side table where people put food that's been miss ordered or made wrong, and we just eat what we want from it.
Every restaurant I've worked at didn't allow you to order food during your shift, even if it's slow. You could eat before or after, however. I guess you've had some good bosses.

If I was ever in any doubt that people were just trying to eat, it went to the dishwasher. It discouraged them from making those ‘mistakes’, while also allowing me too feed people with normal mistakes.

Ive input orders wrong/canceled orders and my boss told me to auction to tables or a sous will take it. We dont like to waste but I dont eat any meat or fish(allergy) so it its usually been boh or to a table for free!
This is a silly concept 🙄 Its made, its done. Why is the trash any better than feeding your employees?
It is to avoid staff putting in orders to fake a mistake just so they may it themselves.
If you give them a shift meal or even better for food costs and camaraderie, offer a family meal and the staff won't need to do that anymore.
If it's out of temp for 4+ hours, you can't sell it per the health code.

The only time my boss let me keep voided food is when I did 2k in 4 hours as the only server 😭 I know it doesn’t seem like a lot but it’s a local business so it was a lot for us
I've done this a long time and I am surprised how many managers think this way.
I live in a city with a lot of homeless people, and throwing away food sickens me. When I worked in restaurants where there were quite a few nearby, I would literally put it in the sidewalk trash can. By which I mean on top. (Ours have covers so I'm talking not even in the trash receptacle.) I always knew the person who needed it would find it that way.

Had a boss who would box up any mistake and eat it himself. Sometimes in front of us. While we had no breaks and only got a discount on food to take home. He said we couldn’t have it because he couldn’t be sure that we didn’t make the mistake in an attempt to get free food off of him. One time after working a week of double shifts to fill in for a coworker who was sick he so graciously gave me the salad special that sat on display all day.
People pull shady shit to get free food. "Mistake orders" happen all the time if people can go home with them. Sharing at work with everyone for a snack is 100% the way to go. Not taking it home is standard most places.
I wouldn't let an employee take it unless I was there and took the order.
We are just the opposite. Our managers always ensured we were well fed and hydrated. If food was not picked up, and a staffer didn’t have a place for it we’d find a person on the street or neighbouring business to give it to. The local convenience store owner fucking loved us. We always got deals when we went into his store. Not to mention it actually brought business in.
I KNOW this will be voted down but I understand his reasoning, if he allowed employees to eat orders nit picked up it opens the door to having orders called in by friends or family who have no intention of eating just so friends can eat free. Just the facts not agreeing or disagreeing
i agree but if management is worried grand conspiracies, they can make pick up orders prepay.

I was once getting absolutely pummelled on bar (just me and one server with a big patio during covid time). She ordered a deus which is a very expensive beer designed to look like a dom bottle. I grabbed the one with the foil already torn and threw it on service bar. She grabbed it and immediately opened it and poured it at the table a it hour thinking twice. Pours it and realizes it’s not deus at all.
Messaged our gm and she told us to leave it in the fridge for her for tomorrow and that we’re not allowed to have some… after a shit night of being understaffed with no managers present. She ended up not drinking it and just dumping it :(

my bosses feed their entire staff every night for free, chicken, tofu or talapia dishes, we can also order snacks throughout the shift and drink teas, juice and sodas, we make smoothies, really good people, we still only make $2.13 an hour & 0 benefits, but hey food is a basic need and we are all well fed, i feel blessed
Yeah no just eat it in the cooler they’ll never have any idea who cares. Sneak it in there and take a quick bite and walk back out and always make sure you leave with something from the cooler in hand. The idea in the owners mind is “I don’t want employees just having people call in fake Togo orders over the phone just to feed themselves on shift” which I get, but overall is avoidable by taking card over the phone so it’s paid for and you should be able to trust your crew. If you can’t trust them then why did you hire them?
Also I understand the promise of paying in cash when the “customer” gets there, but let’s be honest most people pay by card now anyways unless you work in an industry that operates mostly in cash you’re usually paying by card to begin with. Since I stopped serving I barely ever have cash on me to pay for things so I use card mostly.
Plus last place I took any Togo order for we wouldn’t take the order unless it was paid for with card. If you were paying cash most of the time I did the courtesy of still sending it without payment, but they wouldn’t know I was sending it till they got here. I would never fire the order till I hung up anyways just to see if they would cancel when I told them I couldn’t send the order over the phone without a card number

I get the voiding it for the reasons for inventory and making sure, but at my place if the customer ordered it and it was made then we can take it home. Like the food is going in the trash anyways so if we want it we can have it. Just it is not a typical thing.
