Technically the bear is going to do at least 2 of those 5 things listed (steal blood and organs) and likely do 2 others (revoke limb privileges) when it eats you alive. But you'll be safe from medical experiments so you got that going for you.
I imagine lots of big predators do it if they dont consider the prey to be a threat. I take it you've never seen one of those videos of a lioness sitting next to a wounded gazelle, or caring for a baby prey animal as a way to lure the parent out.

If I kill the bear and harvest its meat and skin it won’t have a negative hit to pawn morale.
Yesterday, I was raided by sappers who killed a bunch of my puppies and were unwaveringly loyal. I captured a couple and harvested their lungs and kidneys as I had some colonists that were missing them. The raiders were upset that I was harvesting, well don’t raid me & kill my dogs.
Then the colonists got all upset because I harvested and killed, even the ones that got new lungs & kidneys. I may take their new lungs out, ungrateful bastards.
