Staying in Crete for one week at an all inclusive so meals and stay are covered. I am planning to take a one day trip to santorini ( might sample the local food but I’m not a big eater so I can economize) and adding an excursion another day so I’ll be leaving the resort 2x. Honestly I am a low spender and usually bring my own food to the airport (to cut costs) and mostly spend money on souvenirs for my loved ones when traveling. Whats an approximation of how much I should bring? Also, is tipping culture big in crete or do people usually not tip?

I took €6 cash with me when I went recently. Brought €4.30 back with me. Everywhere takes cards and I have no transaction fees to worry about with my bank account so all good.
Don’t do this! Pay with cash in Crete. The locals would prefer you pay cash and leave no tip than pay card and leave a tip.
I didn’t go eat out at places so much as I was all inclusive and ate at my hotel. So minimal shop use with card worked totally fine for me.
Tip is optional generally people tip if they're very happy with the service.
You probably need to elaborate more on what sort of things you're looking to spend on. For that day trip in Santorini you could get by with 50-100 euros but depends on what you wanna buy. Going out for food average will be about 20 euros a head.
In santorini I’ll probably buy a couple of souvenirs and get lunch but my eating is very modest ie I don’t eat huge quantities of food so a simple meal for me suffices. Outside of that, the only other time I may spend money is in the airport on the way back since I’ll get hungry and it’ll be a long journey.
So you're asking how much money you will need for a simple lunch like a gyros and a couple of souvenirs like fridge magnets? 20 euros will be more than plenty for that. At the airport you can use card. It sounds like 100 euros will be plenty for you.
