Hey man. Came across this post when I was trying to find an answer to a question I had. I'm about to order a natural gas grill as I have a NG line outside my house for grilling. The previous owner didn't use that line ever so she had it capped. I decided to uncap it to make sure it's got gas before buying the grill. When I uncap it and then twist open the valve, the gas comes out very fast. The hissing is quite loud and I can smell the gas right away. Is that normal? I guess my concern is that there's too much gas coming through that gas line.
I’m not a plumber, I can’t answer this question with any certainty. But I do think that NG is regulated at a higher PSI than most fixed regulators for LPG. But that’s all I will say. Call a plumber and have them plumb it in for you. I wish I could help more but I can’t.

When you buy the grill it will have a gas regulator built in. Be sure to purchase a grill made for natural gas.

You have to add an adapter kit that throttles the amount of gas that will run to the grill.
Buy a regulator for it

Same concept is now on diesel vehicles at the exhaust pipe. When diesel engines need to regenerate, they have to burn off excess soot and other stuff in the diesel exhaust filter, and that requires it to be very, very hot. There was a real chance of something literally being blow torched by walking by the exhaust pipe while this normal operation happens until they put holes in the exhaust to draw in air to cool the hot as heck exhaust gases.

It's an orifice with air shutter for primary air mixing. The velocity of the gas along with the orifice size is what creates a draft to draw in air for combustion. This one is non-adjustable.
Also a good idea to check the venturis for spiders.

I've seen some water heaters like that. Always wondered if the pilot made enough heat to induce a draft to get the gas into the burner compartment. I was used to a solid tube all the way to a burner inside. This one just had an orifice on the outside. Just seemed unnecessarily dangerous but IDK. I guess it worked until the burner gave up the ghost.

I am assuming there is a brass part with a small hole somewhere at the end of the gas line. That orifice regulates the proper amount of gas to support the burner ports. The orifice will be different sizes for propane or natural gas as they have different heating values.
The gas jet from the orifice should push gas down the center of the tube and draw air in from the slots you ask about. Flame is supported by the right mix of air and gas and those open slots should be designed for that specific burner

Propane has to be around 2-10% gas to air mixture for it to be flammable
