Ambient humidity of a house is usually 60 on the high side. Most commercial mushroom fruiting chambers are around 80-90 or higher.
Yours look very good for not having any kind of humidity control, nothing to worry about. They look fine and even if they have dried out enough to stop growing it doesn’t matter you can just harvest and enjoy, won’t even really affect the quality.
At this point harvest whenever you want.
Break and shake speeds up the process considerably if you know you’re working with something that has no contamination. If it’s slightly dirty it can also distribute the contaminant and the mycelium will have to fight, and usually lose.
They could be and you wouldn’t be doing anything wrong.
Most of the time people wait until the cap is about horizontal, but there are reasons to harvest early and reasons to harvest late. It’s personal preference.
Yours looks like it has the possibility of being dried out. If you notice it has stopped growing I would reccomend harvesting. If you believe it is still growing well, you could wait longer if you wanted.

I still feel like there’s just too much variability between different samples for this to make sense as an experiment. Even if you do the same amount of liquid culture it could have very different amounts of mycelium.
You’ll have a lot of trouble having “equal amounts” of mycelium with agar vs LC.
I think this is a cool personal experiment for you but without some more controls it’s not replicable, or the results would vary wildly.
They will be more delicate but have a shorter shelf life.
Could be bad advice depending on how friendly ops growing season is…..
I’d advice against LC and cakes and focus on monotub
