I'm in Plumbing/Drainage/Gas. The market is tight and companies are undercutting each other to the point of buying work (quoting below cost to land a contract with the hope of making it up longer term).
Also, guys are leaving the industry and doing other things, and companies aren't replacing those that leave.
That being said, a few companies you could try: Kilray Plumbing & Gas, Ben Dixon Plumbing, Hanlon plumbing - they all seem to have some reasonable contracts going on.
Some things worth considering to stand out: Have reliable transport. We had a guy for work experience last year and I have never seen a teenager with such an immaculately clean car inside and out, despite being a 30 year old Honda. I wanted to hire him for that alone. All going well, you'll get a company van / truck and if you do, keep it clean and organised. Keep some clean slip on shoes handy so you can whip your muddy boots off before jumping in. Don't smoke/vape in it, don't leave rubbish / food lying around in the cab.
Phone - unless you're given one for work or expected to have it on you, leave it in the car until smoko / lunch.
Tools - if you're using someone else's including the company tools, respect them. Clean them down when you're done. Some places will do a $X per hour tax free tool allowance, you should use it. If you grab a tool and it's not right/broken, let the boss know.
Work hard and be motivated. Ask questions, don't stand around waiting for someone to tell you what to do. Sweep down the slab, barrow chip, pick up off cuts and bin them, collapse cardboard and keep it tidy.
If you're feeling stressed / having a hard time with things, talk to your supervisor/foreman/boss or an organisation like Mates in Construction. I've seen too many guys try and self medicate their problems away. There's people to talk to to help.
Check out a union - it might be for you especially in your early days.
