Use OOPSpam. Spammers can get around CAPTCHAs.
Ideally, you want to use both a front end solution like Turnstile and a backend solution like OOPSpam.
This is called card testing attack. If possible set minimum price for purchase at least $5, ideally $10.
Disable guest purchases.
Add Turnstile or reCaptcha.
Install OOPSpam to stop spam orders that bypass captchas.

Not sure what is the issue with Akismet. They started injecting JavaScript into the front end for spam protection, I wonder that is what triggered the alert.

With any spam protection system, you will get false positives (legitimate submissions that are blocked). But you can minimize the risk.
Not sure about Akismet, but with OOPSpam you can view and report blocked form submissions on both your WordPress dashboard and their dashboard.
This way you can periodically review blocked submissions and see if any legitimate submissions have been blocked.
In addition to captcha, use OOPSpam to block abuse IPs and emails.

This is a common problem nowadays. So many "SEO" tools that collect URLs and submit forms in bulk.
Pass the email, IP and message field (if you have one) of each submission to the OOPSpam API. If you are looking for a free option then use Turnstile, but it doesn't check for malicious emails and content.
