I think most people have covered all the points so I'll just comment on the area and cost of your apartment
Gouva is a decent area, very close to mets and pagrati. Which have a heap of bars and restaurants to visit. It's also well connected to the city centre by bus, or it's about a 15-20 minute to the centre of Athens (syntagma).
What type of place are you looking at for €2000 / $2000 per month? 1 bed, 2 bed?
2000 per month is a lot if you're after a 1 bed.
Check out a website called Blueground - they are cheaper in rent, but you will need to put a deposit and pay their fees. But their monthly cost includes bills.
Some other areas to check:
Pagrati, koukaki, mets, Ilisia, Hilton.
Also a check a website called spito gatos for rentals (you'll find Blueground there and another short term stay company called yestay )

About. 10 minute drive lake from there is opas palia- these are your local tavernas
In the centre of Athens you can visit Atantikos which is seafood or
Around the corner from Atlatikos is Νικήτας, which is traditional Greek taverna food
Raki meze is also a good choice for the centre

Lefkada has some great beaches. Corfu has great waters and the surrounding island on Paxos and antipaxos also have some beautiful waters. Symi also has some nice beaches
On Mainland Pelion has some very very nice beaches, along with Mani down in the Peloponnese
Also, don't add the insurance from the kayak website. When you pick the car up they will say that, that insurance doesn't cover you
So just go with the companies insurance when you pick the car up
