The Temps I posted are from a probe above the grate. The display on the traeger has some serious averaging going on.

My 2016 lil tex is getting worse. Set to 250 right now, it's cycling between 180 and 490. I scrubbed the temp probe with steel wool before the last cook and ended up with a grease fire anyway. Not uncommon for the fire to go out either. I'm about to junk it.

For the other half you're freezing, I recommend curing it for a week in "Pop's Brine", low sodium version. I inject the brine too.
