look for the ones that have actually been fermented. they're usually from smaller companies and can be hard to find though.

I learned about this the hard way, when I picked up some cat shampoo that contained it and my cat started to have seizures just after the bath. Fortunately we were able to wash it off and she recovered OK but it was scary AF and it's important that people with cats in their proximity be aware, as it was mentioned nowhere else in the comments. The more rural you go, the more freedom you'll find, and the cheaper the land, but also the harder to find employment and anything else civilization offers - like health care.
It's done at the county level, and they'll use different names, but you're generally looking for open use / no zoning land to purchase. From what I'm skimming on the internet, the Southeast is very friendly to RV living - Texas, Florida, Alabama, Mississippi, South Carolina, North Carolina, Kentucky, Tennessee, Louisiana. Depending on the state/county there may be permits needed or inspections required.
And that's just for camper/RV living. If y'all've got the budget and can buy land and have a home built (to state/county requirements) you're good.
Technically it can be done, but it's hard to do well. Last I checked, the general recommendation was to let compost for 5 years b/c human fecal waste is chock full of things that are fine if they are in your gut, but can be extremely pathogenic otherwise, and you reallllly don't want them in your water table if you're on a well (which presumably these people are). Look up "fecal oral contamination" for some ideas, but e. coli is a classic one.
In cultures where night soil was used fairly recently as fertilizer, the cuisine doesn't have raw vegetables/salad, everything was cooked, in an attempt to help get around any pathogens.

I'm no expert on cottagecore, but in circles I frequent it is often somewhere between a daydream and an inspiration for struggling women who dream of a safe, fulfilling, introverted and rural lifestyle. Where it gets the political bent is the rejection of modern throwaway consumerism, and also many (though not all) fans are lesbians. I'm sure there's straight areas of cottagecore but there's a sizeable lesbian contingent for sure.

There's all kinds of homesteaders, from vegans with extensive gardens and orchards to hardcore meat eaters with primarily animals and everything in between. Do whatever makes sense for you and your family.

OP you have been through some serious trauma and I hope you are able to find some compassion for yourself. Given your situation I'd consume whatever gets you the nutrition that you need at this time until your situation is more stable / independent.
That said I've really gotten into smoothies, but I'm not familiar with low oxalate diets so not sure how helpful this will be. But if you have access to a blender and some small ball jars with lids, you can make smoothies. I've been doing a lot of plant milk + vegan protein powder + frozen fruit + vegan yogurt etc. stored in the freezer and pulled out as needed. Give them some time to thaw.
Combine this with a few handfuls of walnuts, or nut butter + gf bread can be a quick light meal.
