They should be billed for the over time for all the staff ⌚ and the manager needs to grow a spine. We used to have a non-refundable deposit for reservations, which was put towards the bill. And if you're more than 30 minutes late, you lose your booking. (but we gave them 40 minutes off the book to make it seem like we were giving special service) but 90 minutes? Uh-nah. McDonald's is down the street. They don't care if you walk in 5 minutes to close.
I find cheese scrapes off easily. But pots and saucepans that have milk burnt in the bottom … it can take several shifts of scraping, soaking in grill acid, and scrubbing with steel wool to get clean.
The silicon forms used in the pastry section for making individual size cakes. They need to be soaked, washed in the machine, then each little indent needs to be cleaned with a sponge, and then run through the machine a second time. The small forms I can fit 5 on a dish rack, the large I can fit two to the rack, and the huge ones only one form per rack. Also because they are so light, I have to put a second rack on top to keep the water from blasting the forms off the rack and jamming up the machine.
