My favorite salad (although not the most healthy!) is Nancy’s chopped salad

This shrimp pasta I made last week was definitely the standout dish last week.

Sunday: pasta primavera

Monday: chicken and rice taco skillet

Tuesday: spinach stuffed salmon with roasted corn I need to use

Wednesday: buffalo chicken stuffed peppers

Thursday: carnitas tacos

Friday: air fryer chicken legs

Saturday: homemade pizza

New Lesions Weeks Later?

I started symptoms on 5/2, first lesion on my face on 5/3, started antivirals (7 days) and prednisone on 5/4, rash mostly cleared and now just insanely itchy.

Is it normal that I think I have two new lesions on my face in different spots? Is that just par for the course or do I need to contact my doctor about additional antivirals?

Thank you for your response. I was supposed to go to the eye doctor Thursday but I’ll call them tomorrow to be seen sooner. The ophthalmologist did not prescribe a steroid eye drop just that antibiotic ointment which I think was irritating my eye more.

Was the white part of your eye bloodshot at all?

Easy week of repeat meals over here getting ready for vacation. We made this pearl couscous salad yesterday that was sooo good. Definitely going to make again.

How long was your eye swollen?

Diagnosed in ER last Saturday with shingles on scalp, forehead, eyelid, started antiviral and prednisone. Checked and cleared by ophthalmologist on Sunday. Monday my eye was half swollen shut, Tuesday and Wednesday completely swollen shut. Saw doctor on Wednesday who said it was normal since I don’t have any pain or the other telling factors. Thursday my eye was less swollen and could open about 2/3 of the way, and now it’s stayed like that for 3 days.

How long until your swelling around your eye completely went away? I have a follow up with the eye doctor this week.

Yes I’ve been on antivirals since Saturday and prednisone. How long after was your follow up? They told me I could wait 2 weeks before seeing the ophthalmologist again but I’m wondering if that’s too long.

Eye Shingles Question

I was diagnosed with shingles on Saturday with all the classic symptoms and two small blisters on my eyelid. I was told if my eye had any changes to come back to ER to see ophthalmologist. Sunday I woke up and noticed a bunch of blisters along my eye and it was starting to swell so I got checked out by the ophthalmologist who said everything was clear inside my eye.

Monday I woke up and my eye was half swollen shut. I called PCP and they said that’s normal for swelling from shingles. Today I woke up and my eye is completely swollen shut. I know that I am supposed to return to the ophthalmologist if I am having blurry vision, but I can’t even open my eye.

How often were you checked by an ophthalmologist after initially cleared if it was around your eye?

Wednesday: bumped this air fryer whole chicken to this week because I ended up making these chicken fajitas

Thursday: baked salmon with some veggie and potato

Friday: Defined Dish sour cream enchiladas

I haven’t tried it yet but I have high hopes! Not sure if they sell Bell & Evans chicken near you but they tend to have smaller whole chickens that I think will fit in our air fryer.

My favorite food blogs are Pinch of Yum, Gimme Some Oven, Smitten Kitchen, and Butter Be Ready.

Sunday: making these Cajun shrimp boil packets that we didn’t get to yesterday. I also made a big batch of pasta salad for the week using the Nancy’s chopped salad recipe but with pasta instead of iceberg.

Monday: grilled sausage and peppers

Tuesday: blackened fish tacos with black eyed pea salsa

Wednesday: air fryer whole chicken with baked potatoes and broccoli

Thursday: air fryer hamburgers

Friday: old bay chicken skewers. Not sure yet what to serve with these.

It is really good although we always wish we had a bit more sauce since it makes two pork tenderloins

Monday: I made these air fryer chicken legs last week with McCormick rotisserie seasoning and they were so good and so easy. Made some of this green Peruvian sauce to serve with it.

Tuesday: kielbasa pierogi sheet pan

Wednesday: chicken meatballs with a sauce and air fryer roasted potatoes

Thursday: miso salmon which I always serve with those Costco individual rice bowls and broccolini

Friday: air fryer wings and jalapeño popper wonton cups

Saturday: Cajun shrimp boil packets
