I don't think the fall off the bone kind of meat is a success. It tells me that you've smoked (or foil) it for too long and it missed its window of ideal firmness. It has to have a little resistance and a little firmness as you bite into it and you have to give a little more effort to pull the meat off the bone. When I started barbequing most of my unsuccessful projects produced similar results as in the video.
