Listening: Secret Chiefs 3. They are the rhythm section of the band Mr Bungle and play prog jazz Middle East weirdness. Checking them out for the first time although they have been around for a while.
Watching: Not for the first time, I just watched Excalibur (1981) after seeing it mentioned on X. It's great.

Milk poaching is a thing but maybe reduce/thicken and finish the sauce with cheese after the chicken is done.

It's a time and place thing for me. Those first couple singles and then the SXSW performance were so incredibly exciting. Then Silent Alarm was released and it actually delivered on that promise. A Weekend in the City was a good album but nothing after the debut captured that same feeling. I won't disagree with you on the merits.

I wish they broke up after Silent Alarm.

You just need jeans and mullet for Hood.

Summer of Sam is a bit rough, but I always liked Adrien Brody's character quote "It's all in the attitude" or something to that effect. He also captures the fashion show that was the British punk scene.

This was pretty much straight out of FWSY. I revived my starter on Thursday. Feed Friday. Feed again Saturday morning (I got lazy and didn't feel like mixing Friday night). Mixed the dough Saturday night in a stand mixer. One fold before going to bed and covered the mixing bowl with a tea towel. This probably wasn't the best idea because it was a little dried out on top in the morning. I divided and balled the dough around 8 am the next day and proofed in floured bannetons for about 4 hours.

Pre-heated two 4 quart dutch ovens at 475 for about an hour. Baked the loaves covered for 30 and uncovered for another 20.
