Looks better than the pics of the unrendered fat cap served at styles in Austin. You done good!
Looks good for a first attempt. The fat isn’t fully rendered. Next time try holding off the wrap until the fat cap feels like warm butter and doesn’t spring back like butter. Internal temps don’t really give to best indicator for when to wrap.
I wrapped to get over the stall, but next time I'll try going until that fat cap is buttery!
