Came out great. Couldn’t have it too rare, doesn’t slice well. Even the medium parts turned up super juicy and tender. Would 100% recommend and do again. Thank you to everyone who gave me some encouragement and advice. Fed 26 people with leftovers. French dips, added hot jous right before guests arrived. Sorry for lack of pics. Cut on a slicer, so it’s cut in a way that’s most convenient to fit on. 14 pounds.
Update on a whole sirloin butt. Pulled at 130 internal. 5.5 hours at 225ish.

No, you don’t understand. I might get into competitive deli meat slicing so I need the $1,200 one from the Costco business center. It’ll save money in the long run when I have to upgrade…

I'm just sitting here with an OKJ highland that I bought off Facebook marketplace for $150 trying to make the best of it.
I named it the Millennium Falcon because I heavily Modded it out: It came with tuning plates that the previous owner put in, and nd he sealed the fire box up pretty good with RTV and put a gasket around the cook chamber. I put an 18 inch tail pipe extension over the stack for better draw (I highly recommend this). Used a bread pan to lower the stack to grate level. I also put in a couple of probe grommets, and I lined both the bottom of the fire box and the cook chamber with fire bricks.
Trying to figure out a good way to put a second rack in it without welding and also need to work around that bread pan. But with the mods I have, and a lasagna pan full of water next to the fire box I get between a 1-7 degree variance in temps across the cooking grate, which I think is pretty rock solid. It does take a long time to get it up to temp though. A good hour to get it to 275 with clean smoke without overshooting it. All in all I'm in for about $200 on this thing.

There's not much better than some quality beef cooked rare and sliced thin on a sandwich. One of my all time favorite sandwiches is sliced beef, melted cheese, horseradish sauce, and a pile of pickled onions. Hard to go wrong with a French dip too.
Welp, I know what I'm doing this weekend for lunches next week. If it even lasts that long.
One of these days I have to figure out how to do a roast like that.
