I had company coming and used a whole rotisserie chicken and made chicken salad (traditional recipe with chicken, mayo, celery, apples, garlic salt, pepper), but the company cancelled and this has been sitting in my fridge for four days. What can I do with it before it’s too late?
That reminds me of the sandwich swap fridays in Ted Lasso. ❤️
Ted Lasso is my all-time favorite show! Love it.
Freeze it in portions! Ziploc or small containers
I read on Google that mayo doesn’t freeze well and it will taste weird when thawed. But I think I’m going to do it anyway, if I don’t get any different ideas. Thanks for your help! 😊
My only other thought is use it as part of a pot pie filling! Which you could then potentially freeze for the future.
It might taste funny if you freeze the whole jar, but I wouldn't think it would be a problem when it's all mixed up in a dish.
You could have it on wraps, salads, and all kinds of different breads. It sounds to me like you should organize a picnic!
Mayonnaise separates when it's frozen and thawed
Typically it does fine if it’s in a composed salad, just stir & you’re good to go. :)
You could make croquettes! Just add eggs and breadcrumbs until you can form patties, then pan fry them.
Add some stock/broth and rice and bake it into a casserole. Then you can freeze it.

What I would do is make sandwiches for work friends, and then have them make me sandwiches on the next 2 consecutive days so I don't have to make lunch.
I work in an office and some of us do this to use uplarge quantities of leftovers (when one of us has a party, for example)
