I have an M1 MacBook Pro and I wanted to know if I could plug my playstation into the usb-c to use the MacBook as a monitor, as I don't have much space at uni for a large monitor. thanks in advance.

You know you can just get a USB video capture dongle that'll work with any HDMI source.

Yes USB-C ports are 2-way for many things and have been since their inception.
For example, webcams use USB.
What I was talking about is HD video e.g. HDMI, DIsplayPort (DP) direct to the display as if it was a monitor. I haven't seen that.
While techinicaly I don't see why It couldn't be possible It's just not something done even these days with DP over USB-C.

I think you would have to use a frame grabber device, something like this. I haven’t tried this and I don’t know if the lag would be tolerable for gaming.

No, but you can use the Playstation App (PS Remote Play) to play on your Macbook. You need a great internet connection for a decent experience. I have played Demon Souls via this app without a lot of problems but I have fiber gigabyte internet, with slower speeds you may have delay issues. Otherwise, I would suggest a 24" inch Monitor with HDMI and USB-C connectivity.
No, the USB-C ports don't act as a display input. To do that you'd need an external capture device, but that would likely introduce a good amount of latency.
