I have this fantasy of having my own food business. And it has been getting stronger recently.

And a food trailer is a cheaper way to test the waters rather than investing heavily in a restaurant and soughing a multi year lease.

At the beginning, I will be renting out a trailer before I go all in buying one.

The idea I have in my mind is to sell tacos. With the option of the different filings, and option for flour and corn tortillas. And quesadillas for the cheese lovers. And chips. Nothing more. Keeping things simple at the beginning before I add more options.

I looked at a trailer the other day, and the person advised me to not run it by myself. He said I will need someone to deal with the customers and take orders and payments.

But in my mind, I'm selling tacos. The fillings and salsas will be paid in advance. All I have to do is reheat them on the grill. It will also take a while to build customers before it gets to a stage where I can afford to hire people.

I don't have any family with me for them to jump in and help me. I will be by myself. I could possibly call on friends to help me occasionally.

How would you guys do it? Run it alone or hire someone from the beginning?
