I’m going to be traveling cross country in my tiny little teardrop camper this year and NEED some meal recommendations for 2 months on the road. I have a propane stove and will have access to a safe space to start a campfire most nights, and will be staying in the woods so I’ll have more than enough time for intricate meals; though I have a smaller cooler so the less ingredients the better!
The best part about chili and camping, is you can make it vegan without compromising the nutritional benefit, and it won’t spoil as quickly.

Yeah so you can sit on the ingredients for longer/later into the trip, and then once it’s made you can keep it a couple days or so. All kinds of good hacks like that.
Ramen and other instant noodles. Drop an egg in the boiling broth for a protein hit.
We lean heavily on one-pot and one-skillet meals that take advantage of as many shelf-stable components (or produce that maybe should be kept cooler but not necessarily cold, like cabbage and root veg and winter squashes). Lentils, pasta/Asian noodles, parboiled rice (and all box rice mixes are made with parboiled as well), dehydrated potato flakes are amazing for making soups and stews 'creamy', Soy Curls, dehydrated soup vegetables, freeze-dried or powdered soup base/stock/bouillon, canned tomatoes. You can buy powdered heavy cream, milk, cheeses, sour cream, and cream cheese - unfortunately most come by the pound which is kind of a lot, but maybe you have a baker or experimental cook in your life who might want to split them with you.
Variations of pasta dishes. Get creative!

Tacos and their cousins (Burrito, Taco Bowl, enchilada, etc) are always great while camping! Maybe do Taco Tuesday every week or something like that. You can switch up the protein so you don't get tired of the same thing.
Chili is always a go to meal for me. Easy to make and it makes a lot. You can serve it over rice so it keeps you full for longer or go the classic frito pie route.
