Same. I was 100% convinced there was no real cheese in them. I left them a little to long in the oven, left them to long in the microwave while reheating and they looked better.

Ooh reheat ypur pizza in an air fryer if you have one, comes out so much better than a microwave!
If you don’t have an air fryer, heat a skillet on med-high and slap your pizza cheese-down in there and flip it after a minute or so.

Toaster oven works best if you don't have an air fryer.
If you have neither, microwave the pizza till you hear it sizzle then place crust-down on a hot pan. Hot on both sides, crispy on bottom, and no melted cheese/sauce stuck to your pan.
This is exactly what I do when I reheat pizza in the Microwave to where just hot enough then slap it on the skillet for a minute.. It turns from all floppy to crispy deliciousness~

Not OP but I had a delicious slice of pizza from Pinky’s (I think that was the name) at the Houston (Hobby) airport.
All of them. The average restaurant/bar/coffee shop rating for all airports are like 2 out of 5. I'm convinced that there's no such thing as decent airport food.
I had a similar looking one at LAX last year. It was so bad but the only food open at midnight when I was flying out.

As I remember 15 or so years ago from the hostess: owners went to Cabo San Lucas on a vacation, and decided to create a restaurant based off that eating experience. The restaurant, maybe in Frankfurt? I lived there a while, ate all over.

Really? Other than the dried chilis, what would be hard to source? You can get by making most mexican food with like 10-15 ingredients that can be found basically anywhere in the world.
I have no idea what would be hard to source. I didn’t make much Mexican food when living in Europe.
But what I feel that I can assure you is Mexican dishes don’t contain red kidney beans, cold naan, and cold curry-like seasoned made up salsas.
Ohhhh... I just now imagined the German couple probably went heavy on the Indian spice route instead of the Mexican spice route. There's some overlap there, but man, they lead to very different outcomes.
