I was looking at inflatable or folding kayaks for the ease of transportation but I know my height is going to be an issue. Any suggestions on a good starting kayak?

Question/Advice -- Boat RecommendationsI have an old, 10 foot dagger sit-inside. I'm 6'1 and never had an issue in mine, and still have room to spare.
So, I'd say the design of the kayak is more important than length.

6'3" here with a Pakayak, and it works really well for me. Hard shell collapsible, and a good length for most things. Expensive though.
I’m 6’1 and am quite comfortable in the Aquaglide Deschutes 110. The Chelan 120 would be a model step up from that. Great inflatables in my opinion.
What type of water do you plan to use it in and what do you want to do in it? Fish, float, exercise?

Sit on tops are fun and stable if they’re long enough. They take a little more effort and you’ll want to avoid lakes on windy days. I have a Brooklyn 13’ sit on top that was marketed as a fishing kayak but I just use the extra space to carry supplies and trash grabbing equipment. For just floating it is real comfy. Talking cup holders, stowage in front and back, and with a cart you can portage with another 10’ kayak on top of it
6’2” and I have an Oru Coast and a Haven. Both work great for me.
Try it before you buy it. Can't stress this enough.

Anything not inflatable or foldable...Sorry. They don't last nearly as long as solid boats do...
How old is your solid boat? One of my folders more than sixty years old, with 10th of thousands of kilometers on the water, and is in great shape.

I'm 6' and have a Wilderness Systems Pungo 125 and I'm guessing it could fit a 7'er no problem. It's plenty big. But this is a traditional kayak, not fold-up, nor inflatable.
Dagger high volume
We own SeaEagle Razorlite 393's, since 2014. These are sit-in, open cockpit kayaks and even though I'm far shorter than you, I believe you'd have enough adjustability in the seat and footrests to be comfortable. Being drop-stitched, they are as tough as a hard-shell kayak and with a 500 pound capacity, should be more than adequate.
