How about since you’re travelling to a country that’s pretty renowned for coffee, you just go outside your comfort zone and try something new?
This makes me think of the Emily in Paris scene : “yeah try his meat Emily”. Try Italian coffee Hot Ship 1920, you won’t be disappointed :)
In any case, you’ve gotten some pretty good suggestions for what you’re looking for already.

Ask for "caffè shackerato".
That's coffee with sugar and ice - shacked. In some place they could add cream.
An alternative could be "crema di caffè".

Order a caffe shakerato (pronounced "shock"erato) - it is the Italian take on iced coffee. If you are ordering at a bar, look for some sweetener packs on the counter. Otherwise, say con zucchero un po'.
Order a cappuccino from anywhere…even a gas station. Put some raw sugar on top. And change your life. Then thank me later 😬
Got some bad news for you but iced coffee really isn’t a thing in Italy. I guess just ask for it iced but you’ll probably give you some funny looks not that it matters.

Are these only in Lecce/Salento? We're going there in a month as well.
Mostly in Salento, caffè leccese can sometimes be found in other cities but it’s not super common outside Puglia.

iced coffee is a thing, especially in the south.
usually just coffee with ice, not the super sweet coffee starbucks type beverage.
I lived between north and south and I did not notice any difference. In the north too, coffee with ice is definitely a thing, I have been ordering iced coffee for a lifetime, never had anyone refusing to serve me one.

There is absolutely oat milk in Italy. Oatly and other brands are everywhere. If you want an ice coffee Starbucks style, you can look for specialty coffee shops near you. If you are in a very small town, you may be out of luck, but larger towns and cities should have a specialty shop or two.
There’s oat milk and brown sugar in Italy. Perhaps not at your average coffee shop, but def in stores for you to make at wherever you’re staying. Those ingredients are much easier to procure than ice in a European country 🤪😅
You do all the effort to travel and imagine not having the minimum curiosity to try coffee in Italy

You’ll find oat milk and brown sugar in the supermarkets (and brown sugar in cafes), continue making it at home.
Otherwise, try coffee granita with almond milk (or almond granita if you like it more dense)!
Try a caffe ginseng. It’s creamy and kind of nutty and a bit sweet. I fell in love with it. It’s warm, but it satisfied my need for a sweet coffee.
There are several choices if you do not want the good ol' plain espresso, however sugary drinks like the Starbuck's are not really widespread in Italy. You can get a caffé ghiacciato/caffé con ghiaccio and customize it (with cream, Baileys, milk, etc).
I ordered cappuccino fredo in Italy and received a sort of strong coffee cold cream. It was delicious, but not at all the cappuccino fredo you would receive in Greece (which is what I was after)
Italy has the best espresso hands down, seriously, so whatever you get will be amazing
Whatever you do- drink the cup of water first before a coffee beverage. Trust me, do it wrong once and you learn quickly!!

Order latte macchiato con latte d’avena (latte with oat milk, it includes a shot of espresso). Most bars have oat, soy or almond milk. They will serve it hot; you can add brown sugar in it, so it’s sweet (you won’t find any syrups though, they’re not a thing here). Then ask for ice on the side and mix it yourself 😂
Watching Italians enjoy their morning coffee was so interesting. Most stand at the counter with an espresso and a small glass of water. Take it like a shot, chase with water.

Ask for an AMERICANO. Its hot water added to espresso. It can be iced if you want.
Then add your sugar and cream.
Or bring your own Starbucks instant flavored coffee.

Caffe Florian in Venice is the oldest coffee shop in the world. Cassanova, Proust, and Dickens drank their coffee there. They offer a good selection of fancy sugary coffee drinks
at the cost of a kidney, but worth it.
