best pastry schools in the USA/ABROAD

Now before anyone says anything, yes I know its expensive, yes I know working your way up and working in the kitchen is better, but I have the opportunity to go to culinary school so Im not worried about the cost. In short, what are the best culinary schools in the USA/ABROAD? Not LCB, I know it's a degree mill in the USA.

I'm one of the people that worked their way up. 18 years and counting. I wish I could have went to culinary school and had all the opportunities. No one takes my resume seriously bc I don't have a degree.

Even the really good schools are basically going to teach you how to do everything in a restaurant -- once.

Muscle memory (which is the difference between success and injury on a busy night), only comes with practicing good techniques. The idiom "practice makes perfect" is rubbish. Practicing how to do something the wrong way only reinforces bad technique -- which explains why I STILL suck at billiards. (I'm getting better.) Only perfect practice makes perfect -- the kind of practice that separates pros from amateurs.

Finally, I can't really answer without knowing what languages you speak. If the answer is "English" then my answer is CIA Hyde Park. It will get you in the door pretty much anywhere. I worked fine dining on the Las Vegas Strip. And I only knew a handful of CIA grads. All of them went on the GI Bill or had wealthy parents.

Look around at community colleges. Often some are REALLY good. I can't speak to any right now because my info is older. It is also cheaper and easier to get funding.

Hell yes, my community college was a one year course, but our teacher was a previous competitor in the International Culinary Olymics. She knew her shit so much, such a badass, I learned so much from her.
