Have a 2020 toyota corolla Le, runs in gas and need cvt transmission fluid. Mechanic is insisting I buy genuine toyota transmission fluid so has to not screw up my car with something that isn’t genuine. Is there any truth to this?

Yes there's truth to it. In a drain and fill scenario, you will not be able to remove all of the transmission fluid as there will still be some stuck in the torque converter. You'll usually get half the amount out of the pan when it gets pulled or drained. Adding back in a different fluid than oem (what your vehicle came from the factory with) will not allow both different fluids to properly mix together well and can cause serious problems.
