I'm seeing some good options for Hyatt Ziva cancun (if your child likes dolphins), Paradisus Playa Del Carmen, Royalton Splash (if your child likes large water parks, trampoline park, laser tag) all are right around $2k (+/- $200) with flights and hotels for your dates.
