I was really surprised how sceptical the Catholic church is about this sort of thing.

Oh yeah. They take it extremely seriously. That’s why when a Vatican approved miracle does happen it’s a huge deal.
Side related, but Spanish inquisition was very sceptical about witches and mostly regarded them as old woman tales. They were ruthless fighting heresy, but witch-hunt was virtually non-existent.

As we both know, the objective definition of the supernatural is something that is "beyond the laws of nature". But we also both know that means, by definition, nothing supernatural can exist, because everything that exists must be part of the laws of nature.
But this really says nothing about what is or isn't actually the case.

Show me one piece of evidence that contradicts this. That is all I am asking. Show me one single shred of evidence that something of spiritual / supernatural / magical origin exists, and I will happily change my mind.

What would be an example of evidence that would convince you of a supernatural event?
Remember, it can’t be a photo. Photos are easily falsified. And it can’t be video for the same reason. It can’t be anecdotal or circumstantial evidence either. It has to be replicated, quantified, and peer-reviewed over and over again under highly controlled conditions.
So I’ll ask again, what would be an example of this “evidence?”

because humans are not purely logical beings. just look in the west, church attendance is declining, but that doesn't necessarily mean these people are automatically becoming hard logic machines. people just find other outlets like astrology, crystal, medium, and so on.
Also religion is not just all about the supernatural, it's about cultural identity as well. Many cultural traditions around the world are influenced or originated from religious rituals or beliefs. So even though people might not truly believe in it, they still have that cultural attachment to the religion. Remember, even Dawkins calls himself a 'cultural Christian'
In a lot of countries religion is the only thing people have to hold on to. So it will likely never die out.
It's on the way. But it's a very lucrative business--always has been. It will likely never completely die, but it's in the throes of death now--which are making a lot of noise and mess. And there are places where religion is less likely to die than the supporting populations.
It is arrogance in my opinion. The audacity to believe that we humans have any idea about the start of time and space is baffling. The very best of us can barely see outside of our solar system using technology that we wouldn’t be able to comprehend 2000 years ago, but we know good and well that Jesus is the son of god? I saw a video that basically compared historical religion to our modern era of politics (red vs. blue, right vs. left, ect) and how that is essentially modern religion. Humans are always following some higher power, we just call it something different these days. It's all BS to me, I just wanna play video games and get drunk lol

You can call it Allah, God, Buddha etc but at the end of the day it's just a dick measuring contest power struggle of who's got the biggest army.
