I'm an absolute beginner in wood turning and my problem is that my screws always break when I try to mount the wood on (that's the only thing I have to mount the wood) but I don't know why am I using the wrong screws? or what is the problem?

Huge turning specific resources over at r/turning as well, but likely just not good screws. Drywall screws are notoriously brittle in particular.
