Do the three bone ribs taste different than the four bones?
Some are Chuck short ribs (4 bone+) and generally 3 bone are plate short ribs. I prefer the plate, always seems more tender and meatier.

I agree. The fat to meat ratio on the plate has always been perfect. If you like a stronger "tug" on the meat, chuck can be better.
