For really special occasions or high stress environments I used to use cheese sticks, deli meat, or cut up hot dogs which were super high value AND cheap. Now, I'm in the same boat as you and have a dog with a super sensitive stomach. Now I exclusively use my dog's kibble and sometimes plain cheerios. During my training journey I really came around to the idea of using the lowest possible value food -- if your dog will eat their kibble inside/during mealtimes/during chill times, but not in other situations, that gives you information on how they're feeling. Now I am honestly thankful my dog is picky because she makes it REALLY clear when she's upset or anxious because she'll very quickly stop eating. I also feel confident that I'm not coercing her because if she hesitates to eat a reward or follow a lure, that tells me I've pushed her too far. She won't push far past her boundaries for a reward because it's just her plain old kibble. When she eats her food out of my hand after a trigger, I really know that she has recovered. I put a huge focus on making her eating skills more fluent and using it as a barometer for her general emotions, and it's really worked for us.
Yes I do that as well! I usually carry medium to high value treats while out. She will absolutely spit out the medium value treats if shes too stressed.
