I captured Reyvadin and took it for myself (king refused to give it to me so I renounced my oath). When the budget report came along I got hundreds of thousands of gold but the prosperity dropped to very poor. What caused this?
So the game operates under the assumption that the peasants would continue to pay taxes to the town while there was no one collecting them? the IRS would love that
Hey the tax collector's not gonna just give up and go home lol. He'll sit on that money as long as he can.
Or tax collectors are some kind of independent faction that still doing they work, no mater whose banner fly over these walls.
That's kind of how it worked in a lot of places, although I doubt they'd just hold onto it for the next guy if nobody was in charge

I mean, presumably the town's mayor/government are still collecting taxes, even if that government isn't paying those taxes on to anyone else. Like, seriously, it's a town. One medieval noble who mostly isn't even there can't run the entire thing himself -- there has to be local authorities managing most things.
The guild master does it
This city likely passed from faction to faction for quite a while so that it had no owner for quite a few paydays.
Now that it finally has a lord on a payday it paid out everything collected over that time.
This can also happen if there's a backlog of lordless fiefs that need to given out before this city reaches the top of the list

This just reminds me how much more fun Bannerlord would be with more passive income. Let me invest in land or build more/better workshops so I can worry more about battles and shit. Also, let me rent storage space so I can keep stuff somewhere before owning a fief!

Lords have to visit their fiefs to collect iirc, and idk if they can collect if they have the tax collection quest active

Wheeeew, beyond what others have said, i can add that imo Reyvadin earns almost double what other towns do so you really lucked out with this one😂 spend wisely!
Accumulated taxes, prosperity went to shit for a litany of reasons including the fact that you just sacked the city.
Patrol around for awhile and seek peace so the caravans start making it in/out unharmed and prosperity will start to grow. But as a new faction, you can count on every single faction trying to destroy you for a good couple months non stop, which gets frustrating, but then very boring after they all call it quits.
How the fuck can you collect more than 60000 denars worth of income from a single walled fief?

How would I get more income?
Clearly due to recent tensions with the Kingdom of Nords, there's been an influx of refugees to Reyvadin causing the housing costs to explode. In addition the tariffs placed on Swadian butter by King Yaroglek were intended to act as a way to improve the health and well-being of the peasantry, however he had underestimated the demand and had led to massive tariff profits.
If the fief doesn't have a lord for some reason then taxes don't evaporate into void, they accumulated and payed to the newly appointed lord. Next income would be as shitty as you would expect.
