Ok, this is a doozy. I'm looking for ideas of something I can put in my suitcase (space is not an issue) that can travel with me from Minnesota to Hawaii. The dessert wont be eaten until the next day as it's a surprise for my dad's bday. The hotel we will be in the 1st night only has a mini fridge and then we will be driving to another place the next day before we eat the dessert that night. I was going to try and doordash/ubereats/grubhub something but nothing delivers to the resort we will be at on the 2nd night as it's in the middle of no where. Ideas???
GF Brownies travel well, but don’t stack too many in a package or the TSA get suspicious because it’s a solid block.
They could bring the frosting with them and frost on site
Loafs usually store well and don’t need refrigeration. Lemon loaf, coffee cake, banana bread, whichever flavour he prefers. And they’re fairly simple to make with gluten free flour without changing the recipe.
Now I want banana bread 😂
Can’t go wrong with macarons if they can do almond flour. Celebratory colours, clean-looking, cool box

My only carryon is my backpack and putting it under the seat for 7 hours + 2 hour of the first flight they wouldn’t make it intact.
I sent sugar cookies to a friend when I was a teenager. I folded each one in wax paper. She told me that only one broke. These were super thin, crunchy cookies I used to loved to bake as gifts, since I was a poor teenager with little pocket change.
I'm sure you can get a GF dessert in Hawaii. Just pick it up on your drive, or call a local bakery to have it delivered to the hotel.
Haupia, Mochi, butter mochi cake. 🤤 I feel like they do a lot of rice based desserts.
But maybe dad sees it all the time and would appreciate something mainland style?
Rice Krispies Treats. Dipped/drizzled in chocolate or peanut butter for some jazz.

How about Magic Bars / 7 Layer Bars / Hello Dolly Bars. They’re gluten free if you make them with GF Graham Crackers (I like to use Pamela’s Honey Hraham Crackers). Just wrap them individually in foil or plastic, and pop them into a container.
Look for online bakers that can ship, and have it sent to the hotel so it’s there when you arrive!
Honestly I suggest picking or making something in Hawaii. Aside with the hassles of TSA throwing away food items, GF baked goods as in specialty desserts just don't travel well without refrigeration
Yeah i went to Hawaii last summer and they said youre not allowed to bring fruit into Hawaii, made us throw it out on the plane.
Hawaii is very strict with food items coming and going when it comes to air travel so I would be concerned about them tossing any food. Trying to find an alternative is definitely the way to go, as frustrating as it is.
These almond chocolate chip bars from butternut bakery might do the trick. Now I’m going to have to make these again…
Agree on the brownies/blondies. Maybe a bakewell tart? I also think something like this might travel well if you can jury-rig the rightright container for it.

Gingerbread! Here's the recipe I use. It's good for roadtrips too. My only recommendation is that you make sure to add more spice than the recipe calls for, or else they are quite bland.

Coconut macaroons...super easy, super tasty, and not delicate in any way.
I would coordinate with the hotel and see if they will accept delivery from a local bakery or if they have an option. Cake doesn’t travel well in a suitcase, I tried once lol it was a mess
Macarons. French macarons are naturally gluten free and can travel.
Brownies or blondies. Just keep them in the pan and wrap tightly. They’ll taste great the next day. Handle the Heat brownies and Blondies are always great. Just swap w gf flour.
If you wanted to make a trip, the closest one is in Chicago, illinois. However you can order these online. Sprinkles cupcakes has gluten free cupcakes and I’ve recommended these to my mom.

This one is a little out there, but you could try making Hawaiian butter mochi. It's made with mochiko (glutinous rice flour, which is gluten free unlike the name implies) and would be fitting for the trip. They're flat like brownies so you could fit them into a hard-sided flat Tupperware container.
You could investigate to the area where you are going. Look online ahead of time and see if they don't have a store with gluten free desserts you can find.

Don't skip toasting the walnuts. I've also used toasted pecans. Both are really good, but really rich - they demand to be enjoyed with coffee or tea.
If it were me, I would just order something online and have it delivered to the resort. Seems like the easiest thing, although perhaps a bit more expensive than carrying something yourself.

I know your post mentioned things like Doordash, but have you tried any of the national food delivery services? If you are willing to tell me the name of the resort, I'd be happy to look online and see if anyone can deliver there. Have a wonderful time spending time with your father on his birthday!

GF Biscotti, good with coffee or tea... They ship very well. And you can make them in a lot of flavors, not too sweet either.
Rice crispy treats travel well but aren’t very fancy
I’m suggesting cookies. You can put a but if waxed paper between them, wrap in cling wrap and they should hold up. Brownies will too, but I would take too many.

As long as you have a box to put them in, cookies. I’ve got a good recipe too as long as sugar, eggs and dairy aren’t an issue if you want it
Brownies? I’m guessing anything that’s creamy or has frosting might not travel well, but brownies should be sturdy enough not to break down into crumbs and they shouldn’t be too temp sensitive. And they’re delicious.
